BOISE, Idaho (CBS2) — Alchemist Coffee Company is set to open a 100 percent vegan restaurant in downtown Boise.

The new restaurant will be on Idaho Street in the building that once hosted Louie's Pizza & Italian Restaurant.

Owner Kris Price wanted to model the restaurant after gastro pubs to create a welcoming environment that is completely vegan.

“After traveling to some destinations that have a wide array of vegan options, I decided that Boise deserved our very own 100% plant-based restaurant," Price said. "We’re referring to it as a ‘plant pub’ because, like gastro pubs, we put a lot of thought into our food. It’s also very important that vegans and non-vegans alike walk away fully satisfied, and that they feel comfortable dining with us."

The restaurant will also use sustainable ingredients that are sourced responsibly.
